Westcombe – Made by Tom Carver in Westcombe, Somerset
Westcombe Cheddar has a deep complex flavour with a mellow lactic tang and long notes of citrus, hazelnut and caramel.
The texture is structured and firm, with a smooth breakdown that keeps the flavours lingering on your palate.
Cropwell Organic Stilton – Made by Robin Skailes in Nottinghamshire
Cropwell Bishop Organic Stilton is the ‘king’ of blue cheese and surprisingly Cropwell Bishop is still the only Stilton maker to produce a certified organic Stilton.
The organic cows’ milk gives a mellow flavour with the same strong blue veins expected in any Stilton.
It is rich and masterful, what is not to love!
Like all Cropwell Bishop Stiltons their organic Stilton is matured for 12 weeks.
Delicious at Christmas, but in our view a stunning Stilton for any time of the year.
Waterloo – Made by Anne Wigmore in Berkshire
Made by Village Maid locally in Berkshire, Waterloo is a semi-soft cheese made from Guernsey cow’s milk.
Waterloo has a rich creamy flavour emanating from its naturally golden centre.
Made using a washed curd method which dilutes the acidity to achieve a gentle, mellow flavour.
Its distinctive yellow colour is due to the natural carotene in the Guernsey milk which comes from a single herd of pedigree Guernsey cows
Yr Afr – Bradley and Beth Cunningham in Bethesda, North Wales
Based loosely on Crottin de Chavignol, and the French light goats’ cheeses often found in the Loire Valley.
Aged for 3-5 weeks it forms a distinctive wrinkly rind that breaks down the vibrant, fresh interior to give it mushrooomy, more vegetal notes that offsets a rich goaty-tang.
Stinking Bishop – Made by Charles Martell in Gloucestershire
The name of the cheese is derived from the variety of pear “Stinking Bishop”, the juice of which is made into a “perry” and is used to wash the cheese. This gives the cheese its distinctive nose.
The cheese should be the texture of thick clotted cream but on occasion is spoonable rather than sliceable!
